The Dog and Pickle Pub, Essex

Project Overview

The Dog & Pickle is a refined country pub and restaurant in Essex, known for its elevated dining and attention to detail. Sorrells was commissioned to design and deliver two key elements to support their guest experience: a bespoke wine display and a temperature-controlled meat fridge.

The result is a project that balances functionality with presentation, bringing theatre and refinement to the dining space while supporting the operational needs of a busy kitchen and floor team.

Angled Scallop Racking with Mustard Flocking

The wine room houses 204 bottles on a system of predominantly angled scallop racking, chosen to maximise visibility of each label while maintaining efficient storage. This format allows bottles to rest securely with labels facing outward, supporting ease of selection and a premium presentation style.

Each bottle lies upon mustard-coloured flocking, offering a soft cushioning layer in a vibrant tone that subtly echoes the restaurant’s warm palette. The result is a wine wall that is as much a part of the restaurant’s design language as it is a storage system.

Glazed Cellar Wall

At the back of the wine cellar, a full-height glass partition separates the wine room from the dining space, offering guests a clear view into the cellar. This glazed wall transforms the wine collection into a visual focal point and reinforces the restaurant’s commitment to quality ingredients and curation.

The clean, transparent division adds depth to the space, creating a theatrical backdrop without interrupting the flow of service.

Temperature-Controlled Meat Fridge

As part of the broader commission, Sorrells also supplied a meat fridge, installed to showcase the restaurant’s premium cuts. Set within view of the dining area, the fridge is calibrated to provide reliable temperature control while maintaining visual clarity for diners.

This element serves both a practical and branding function – communicating transparency, quality, and craftsmanship while supporting kitchen performance.

Design Description

The design of the wine room at The Dog & Pickle is centred on visibility, intrigue, and experience. Every aspect has been considered to draw the guest’s eye, creating a moment of pause and curiosity as they view the cellar from the dining room. This is a space that invites conversation before the wine list is even opened.
